Everybody’s job in a pizzeria is multi-faceted. Multiple players must be able to work together across stations and disciplines through the course of the shift. Currently, Alvo’s setup consists of six total areas: Pizza Making, Oven Tending, Preparation, Expediting, Cashier, and Dishwashing. A Counter Person handles the following three (3) areas:

  1. Cashier - handles money and customer service
  2. Expo - handles slices, salads, and takeout
  3. Dishwasher - handles restaurant cleanliness, dishwashing, and stocking

A successful shift as a Counter Person is to handle the Three T’s to the best of your ability:

  1. Transactions
    1. All money and transactions (i.e. discounts, charges, and tips) must be accounted for accurately during your shift.
    2. Customers are treated with expert friendliness.
  2. Team
    1. Preparing the restaurant for service supports the team.
    2. Communicating about everything keeps the team on the same page. Keep your eyes on tickets.
    3. To Expo an Order means to ensure all moving parts are in place so that each customer has an excellent experience. This means a fresh product, on time, totally intact, at the advertised price, accompanied by expert friendliness.
  3. Tables, Trinkets, Trash, and Trays
    1. Ensure dishes are cleaned as the night goes on and put away properly.
    2. Monitor dining area and maintain overall cleanliness and organization (such as stocking napkins, shakers, straws, wiping tables, etc.)
    3. Removing trash as necessary and cleaning spills are part of the job.
